Savoring Japan’s Autumn through the Taste of Seasonal Fish

As the autumn breeze begins to whisper through the mountains of Hakone, the landscape transforms into a tapestry of crimson and gold. Along with this stunning scenery comes one of Japan’s greatest joys — the taste of seasonal food. Sanma – The Pacific Saury

When autumn arrives, sanma (Pacific saury) is the undisputed star of the season. This slender silver fish, grilled over charcoal and lightly salted, captures the essence of Japanese autumn. The aroma alone evokes nostalgia — the scent of sanma cooking is said to announce that fall has truly come. Served with freshly grated daikon radish and a splash of soy sauce, sanma offers a perfect balance of smoky, savory, and refreshing flavors.

You may also find aji (horse mackerel) or buri (yellowtail), which begin to develop richer flavors as the water cools.
