New Sushi-Making Experience Created by Staff to Enhance Guest Satisfaction

Kinnotake Co., Ltd., operating five ryokans and three restaurants in Hakone, Kanagawa, has launched a new cultural program called the Sushi-Making Experience as part of its "Ryocance" project starting January 2024.
This experience was developed by staff through an internal side-job system that lets employees share their skills with guests, mainly targeting inbound travelers. It offers a fun, hands-on way to learn about Japanese culture.
The idea came from challenges at Kinnotake Tonosawa, where daytime options were limited and staff had idle time. By using this time, staff created a program that lets guests make their own sushi, enjoy fresh sushi, and deepen their cultural experience.
Staff researched popular sushi trends and designed the program to suit foreign guests’ tastes. Guests participate actively, preparing sushi rice and grating fresh wasabi, then enjoy their creations in their rooms.
