Kanagawa's Exclusive Premium Beef: "Teppanyaki Zen" to Offer Beyond Staying Guests from 2024

Kinnoutake Co., Ltd. (Headquarters: Hakone Town, Kanagawa Prefecture; President: Kei Kubosawa), operating five inns and two dining establishments in Hakone, Kanagawa, announces the commercialization of "Teppanyaki Zen," which has been exclusively offered to staying guests at the ryokan with open-air onsen, "Kinnoutake Tonosawa," starting from Friday, January 12, 2024. We aim to provide premium beef teppanyaki, a unique offering in Kanagawa, to all tourists visiting Hakone.

Teppanyaki Zen commenced operations on July 14, 2023, within the premises of the ryokan with open-air onsen, "Kinnoutake Tonosawa," in Hakone.
Previously, our authentic teppanyaki experience was exclusively available as part of the dinner (kaiseki cuisine) for our staying guests. This unique offering highlighted the use of premium beef sourced exclusively from Kanagawa.

Beginning Friday, January 12, 2024, we will be launching our Teppanyaki restaurant for commercial use, opening its services to not only staying guests but to all visitors in Hakone. By attracting new tourists specifically interested in premium beef teppanyaki offered at Zen, we aim to contribute to the increase in overall visitors to Hakone and the revitalization of the local economy.

The meat provided by Zen is the "Ishigaki Island Kitauti Ranch Premium Beef," the only one of its kind in Kanagawa. The meat, aged for over 40 months with a focus on disregarding productivity, preserves the producer's passion, remaining tender while enhancing its umami, with only the melting point lowered. In customer satisfaction surveys, 90% of our customers rated us 10 out of 10.

Chef Tanaka employs the "Ishigaki Island Kitauti Ranch Premium Beef," a meat that left a strong impression on him among those he has encountered.

With the desire to "raise wagyu that makes you want to eat it every day," the meat is aged for over 40 months with a focus on disregarding productivity, incorporating the producer's feelings. The resulting meat maintains tenderness while enhancing its umami, with only the melting point lowered. Please enjoy the full flavor and aroma.

Rin
The meat offered is "Kobe Beef." We will use select cattle that have been raised for over 30 months, surpassing the usual fattening period of 25-28 months. Furthermore, the Rin course adds spiny lobster and garlic rice to the menu, creating an image of teppanyaki. This menu was developed to bring luxury and simplicity to those experiencing teppanyaki culture for the first time or inbound travelers not yet accustomed to Japanese cuisine.
