- Head Chef: Jun Yamano
- Hailing from Kanagawa Prefecture, Chef Jun Yamano first honed his Japanese cuisine skills in Hakata before relocating to a Hakone ryokan. With a passion for meeting customer needs directly, he spent years perfecting his craft at a sushi counter. Since 2019, he has led the culinary team at "Sushi Shō," part of Kinnotake Resorts, where he continues to pursue customer satisfaction through his extensive experience and impeccable hospitality.

We carefully select seasonal seafood from the nearby Sagami Bay and Suruga Bay, ranging from Hokkaido in the north to the Goto Islands in the south. We actively use local ingredients and offer limited edition drinks made with Kanagawa-grown citrus fruits to capture the essence of each season.
